Our Story

Welcome to LAAL, a House of Slow-Cooked Heritage

LAAL began with a tin trunk of handwritten recipes: the dastarkhwan of an Awadhi khansama, a Marwari grandmother’s chilli ledger, a Chettinad aachi’s pepper notes. We cook them as written, with the patience they ask for, and serve them with the quiet grace of an old haveli.

Meet the chef “Laal” means red in Hindi — the colour of Mathania chillies, saffron-stained silk and the embers of a tandoor.

The Spice Story

Seven Spices. One Laal Masala.

Every morning at six, seven whole spices are roasted, cooled and pounded in a brass khal-batta. What rises from the mortar is the red heart of our kitchen.

The Chef

Arjun Singh Rathore

Executive Chef & Culinary Director

A recipe is a memory that refuses to be forgotten. I only listen, and let the fire remember.

Raised between his grandmother’s Jodhpur kitchen and the Awadhi khansamas of Lucknow, Chef Arjun spent two decades cooking in palace hotels before opening LAAL to cook the food he grew up on, without shortcuts.

  • Twenty years in royal kitchens
  • Trained under Awadhi khansamas
